Excel online editing - how to set privacy?

I'm using excel online to create a document that allows individuals to plug in their information. For example a list of classes that individuals can sign up by putting their names next to. Is it possible to lock the list so that once someone fills a spot that the spot is no longer editable (other than the admin)? The current system has the flaw that anyone can erase the data that is there and write their own name in.
